Paola Medina of Williams & Humbert and Antonio Flores of González Byass will be hosting this special dinner at Rouge Tomate. A selection of fine sherries from these iconic producers will be highlighted by the simple, fresh fare of this modern bistro, a hot-spot amongst New York wine aficionados.
About the bodegas:
Williams & Humbert controls over 700 acres of vines between two areas: Las Conchas, in the pago of Balbaína, and Dos Mercedes, in Carrascal. Best known for its Dry Sack brand and renowned for its range of blended sweetened sherries, the house produces high quality dry sherries as well. Williams & Humbert is also renowned for its añadas, single-vintage sherries which the house first produced in 1922.
González Byass is the largest in Jerez and one of the most renowned. Their extensive line of classic sherries includes such wines as Tío Pepe, the world’s best-selling fino, and Viña AB, an excellent amontillado, as well as an extensive series of older sherries like the VORS amontillado Del Duque and the VORS oloroso Matusalem, which is a dulce, or sweetened wine. González Byass is also highly regarded for its Palmas, a rare collection of exceptional, unfiltered sherries, and it’s also one of the few houses in Jerez to specialize in añadas.
